Veggie Casserole

This is my favorite vegetable dish and it's so easy to make. Here I took eggplants, red onions, yellow and green zuccini, bell peppers & portobello mushrooms. Cut all the vegetables in large chunky pieces, toss in some olive oil (enough to coat them), add course sea salt and black pepper and a sprig of rosemary. Today, I added a basil leaf since I have it gorwing in my garden and I forgot the mushrooms. Place all the veggies in a large roasting pan and roast in the oven until the eggplant is cooked. It took around 30 minutes in my oven. Soooo delicious, even the kid liked it. Here's a pic of the veggies before I popped them in the oven.

That's Farmer Giles to you

Today I got home from work and as per usual these past few days I grab my bowl from the kitchen and head outside to the back yard to pluck cherry tomatoes from their vines. I had been keenly eyeing the fat eggplants too but had managed to restrain myself until today. Excitement got the better of me and I just couldn't resist. I picked not one but two of them. I will give away these tomatoes as I already have so many, I can't eat them fast enough.

Aren't they just lovely? I would share the eggplants with my sister but she's not a lover of them - oh well, more for me then :-)

Thank goodness THAT's over!

Yesterday morning I arose from bed at 3:15AM, left home at 4:30AM and was at the craft fair at7:00AM sharp. We erected our tent (I'll tell you my tent drama another day), and had the display set up and ready for action by 9:00AM. The event opened it's doors (or should I say gates) to the public at 10:00AM. I have to say it was a very quiet event. Actually it was quieter than any event I've ever participated in (not that I have that many under my belt yet), but like husband said "at least he got to learn all about falcons and owls" (that's a whole other story too)!! We think the impending bad weather kept the crowds away.

We did have fun hanging out with fellow Etsy sellers - Charlie & Sarah, Go-Monkey and Hampton Jewels. We chatted and kept each other company for the 1st half of the day until the big black cloud came rolling in that had us packing up in record time. I must say I have never seen such a scarey looking cloud. I remember uttering something like "I wonder if God is coming?" to myself - LOL.

Needless to say we were up and out of there before you could say rub-a-dub-dub. I was home by 5:30PM, logged on to Etsy and announced that I was going to sell some soap tonight - and I did - lots of it!!!
